PROBLEM TO BE SOLVED: To provide a new method for controlling a lactic acid bacterium, capable of simply and rapidly carrying out the control of the culture state of a lactic acid bacterium in a culture process when various products are produced by using the lactic acid bacterium.
SOLUTION: In a method for culturing a lactic acid bacterium, the intensity of infrared absorption attributed to dissociation type lactic acid in the culture product and that of infrared absorption attributed to nondissociation type lactic acid are measured by using FT-IR method (Fourier transform infrared spectrometer), the pH value of the culture product and/or the concentration of lactic acid in the culture product is calculated from the measured values to provide the objective method for controlling the culture of the lactic acid bacterium. In the method for controlling the culture of the lactic acid bacterium, the intensity of infrared absorption attributed to alcoholic C-O group of glucose or lactose as a substrate is measured and the concentration of glucose or lactose is calculated from these measured values to provide a method for controlling the culture of the lactic acid bacterium. The measurement of the intensity of the infrared absorption is performed on in-line by using ATR-FT-IR method. Consequently, the monitor and control of the culture state of the lactic acid bacterium are automatically carried out.
