Abstract:
PURPOSE: To provide a method for cutting a frozen aeolotriopic food material, preferably, frozen neat at <-5 deg.C. CONSTITUTION: The aeolotropic frozen food material is processed by 'veneer peeling' at a core temperature of -40 deg.C to -5 deg.C. In the 'veneer peeling' process, the frozen food material is cut by method such as lathe or pencil sharpener, for example. In the case of non-cooked food material, a hard binding tissue in meat is softened or crushed by veneer peeling but since fiber quality peculiar for muscle fibers is kept, meat is softened. Therefore, the quality of low-grade meat can be improved. The grains of meat in various states can be prepared. The other food material to be cut by this method includes ice cream, coconut, vegetable and skin materials so that off-cut having new and convenient style can be obtained.
