Abstract:
PROBLEM TO BE SOLVED: To provide an excellent dairy product with inhibition of oxidative degradation caused by various factors such as light, heat, and oxygen, while an off-taste and an off-flavor are caused due to various oxidation factors during the term from manufacturing of dairy products to delivery to a customer such as oxidation caused by heat during sterilization process in manufacturing, oxidation caused by oxygen in packaging, and photooxidation caused when displayed in a show case in a convenience store or a supermarket.SOLUTION: Carotenoids, tocopherols, and a tea extract are added to the dairy product. A method for manufacturing a dairy product includes adding a formulation including carotenoides, tocopherols, and a tea extract emulsified and/or dispersed in water and/or polyalcohol with a surfactant.
