Abstract:
To provide a defoaming agent having a high defoaming effect without affecting a flavor or a texture of a product, and to improve appearance in drinking and eating.SOLUTION: There is provided a defoaming agent for removing air bubbles generated in hot-water reconstitution of puffed and dried rice, the agent comprising arginine as an active ingredient. An arginine content is 0.1 to 5.0 wt% based on a total weight of the puffed and dried rice. This can promote removal of the air bubbles generated in the hot-water reconstitution, thereby enabling improvement in a bubble residue in drinking and eating.SELECTED DRAWING: None
