Abstract:

PURPOSE: To easily produce delicious and high-quality food, highly active and stable medicine, etc., by using crystalline α-maltose as a dehydrating agent, incorporating the agent into water-contg. matter, and converting the agent into β-maltose hydrate crystals.

CONSTITUTION: In dehydrating water-contg. matter especially in reducing the water content of food, medicine, etc., contg. free water, crystalline α-maltose is incorporated into the water-contg. matter, about 5wt% water in the water- contg. matter is forcibly taken away by the crystalline α-maltose as the crystallization water of the β-maltose hydrate crystal, and the water in the water-contg. matter is substantially reduced and removed. Furthermore, the β-maltose hydrate crystal is not sticky and does not flow out. Moreover, the maltose itself is non-poisonous, harmless, and safe natural sweets, and hence the agent can be easily used in feed and medicine.
