Abstract:

PURPOSE: A deodorant and preserving agent, containing a solution prepared by heating and then concentrating a raw material solution containing an extract of a roasted vegetable fiber material and an acetic acid-acetate based buffer solution as an active constituent capable of eliminating completely acetic acid smell, and producing desired preservation effect without changing sense of eating.

CONSTITUTION: A deodorant and preserving agent, containing a concentrated solution obtained by heating and then concentrating a raw material solution containing an extract of a roasted vegetable fiber material and an acetic acid-acetate based buffer solution as an acetive constituent, and used for food. A processed grain food, e.g. bread or Japanese-style confection or cake, processed food, e.g. GYOZA (fried dumpling stuffed with minced pork) or shao-mai, or vegetable salad may be cited as the food to which the deodorant and preserving agent is particularly suitable applicable. Only the amount of the above-mentioned formulation to be added to various foods of about 1wt% based on the foods may produce expected remarkable effect. The above-mentioned raw material solution can be heated at about 80W100°C requiring about 10minW1hr. The above-mentioned heated and cooled solution is concentrated under reduced pressure within about 0.2W0.5 concentration ratio to give the aimed deodorant and preserving agent.
