PURPOSE: To easily remove soybean smell from soybean protein on an industrial scale in high efficiency and obtain a soybean protein having excellent taste and flavor by contacting a solution containing soybean protein with a synthetic adsorption resin.
CONSTITUTION: A solution containing a soybean protein at a concentration of preferably 1-5wt.% is made to contact with a synthetic adsorption resin (preferably a weakly basic anion exchange resin, etc.) preferably at 15-30°C to remove the soybean smell. The contact of the solution containing soybean protein with the synthetic adsorption resin is preferably carried out by passing the solution through a column filled with the resin or stirring the solution and the resin in a tank and separating and recovering the resin after the contact treatment.
