Abstract:
PURPOSE: To provide a nonpoisonous food deterioration inhibitor made of a compd. having an active nitrogen-contg. substituent and having latter glucosylation inhibiting action by reaction with an early glucosylated product produced by the early glucosylation of protein in a food. CONSTITUTION: A compd. having an active nitrogen-contg. substituent such as hydrazine, preferably agnoguanidine is incorporated to obtain the objective food deterioration inhibitor preventing the deterioration of protein in a food. The compd. has latter glucosylation inhibiting action by reaction with an early glucosylated product produced by the early glucosylation of protein in a food preferably derived from amino acids, etc.
