Abstract:

PURPOSE: To obtain the subject food supplementing insufficient fibrous foods intake, effective for health and having beautiful appearance due to no generation of shrinkage or wrinkle in vegetables, etc., by adding a specific amount of water-soluble dietary fiber having a specific molecular weight in a food such as a liquid containing vegetables, etc.

CONSTITUTION: 1-10wt.%, preferably 3-7wt.% water-soluble dietary fiber (e.g. hardly digestible dextrin, polydextrose or oligosaccharide, etc.) having 500-2000 average molecular weight is added into a liquid or gelatinous food containing vegetables such as green peas or pickles or fruits such as cherry or fruit of Japanese apricot to afford the objective food.
