Abstract:
PURPOSE:To obtain a difficultly digestible dextrin which has a difficultly digestible ingredient content of 75% or higher and a low coloring substance content and little gives off an irritating odor by hydrolyzing a roasted dextrin with alpha-amylase and glycoamylase and then removing a digestible component from the hydrolyzate to give a specific composition. CONSTITUTION:A difficultly digestible dextrin wherein: the ingredients (A) other than glucose have a difficultly digestible ingredient content of 80% or higher; the content in the ingredients (A) of a glucose residue having a 1 4 glycoside bond is 30-35%; the average mol.wt. of the ingredients (A) is 510-965; and the difference between a calculated value, Y, of the average mol.wt. of the ingredients (A) which is obtained using the equation and a found value thereof is within 20% of the latter value. It is obtained by treating potato starch with hydrochloric acid under heating, hydrolyzing the resulting roasted dextrin with alpha-amylase and glycoamylase, and then removing at least half of the resulting glucose from the hydrolyzate.
