Abstract:
PURPOSE: To obtain dipeptide sweetener granules having improved physical properties, especially dipeptide sweetener granules having excellent characteristics in terms of handling such as dispersibility and solubility.
CONSTITUTION: α-L-Aspartyl-L-phenylalanine methyl ester is mixed with an organic acid or phosphoric acid or its salt in an amount larger than the equivalent, pressed into a flat state and smashed to give dipeptide sweetener granules having improved physical properties.
