Abstract:
PURPOSE: To obtain a disaccharide ester of 3-methylpentanoic acid and that of acetic acid, and to provide their use as a flavor precursor.
CONSTITUTION: It is required that the objective esters have at least 4, preferably 4.5 groups of 3-methylphentanoyl groups in average per a disaccharide part, respectively, and other positions are substantially occupied by acetyl groups. Suitable disaccharides are sucrose and lactose. The disaccharide esters are suitable for ingredient mixes for extruding, frying or baking, and especially, for flavor products to be heat treated in the preparation or consumption of tobacco. During heating, the esters liberate 3-methylpentanoic acid and/or its decomposed product.
