Abstract:
To provide a discoloration inhibitor capable of inhibiting discoloration of red peculiar to red-fleshed fish meat even if non-heated red-fleshed fish meat and a processed product thereof are stored at normal temperature.
There are provided the discoloration inhibitor for red-fleshed fish meat including cystines and polyphenols, and a red-fleshed fish meat and processed product including the discoloration inhibitor.
