Abstract:
PURPOSE: To provide the title edible preventive, comprising kojic acid, sodium L-ascorbate and sodium bicarbonate.
CONSTITUTION: The objective preventive comprising (A) e.g. ca.13.8wt.% of kojic acid, (B) e.g. ca.46.2wt.% of sodium L-ascorbate and (C) e.g. ca.40.0wt.% of sodium bicarbonate. Use of the present preventive in the form of an aqueous solution in the production of tea buckwheat noodles will be effective for preventing the noodles from discoloration (browning).
