Abstract:
PURPOSE: To obtain a composition for a liquid food and drink containing calcium caseinate without producing flocculates or precipitates of the calcium caseinate even by heating or adding an inorganic salt or preserving the composition for a long period by enhancing the solubility of the calcium caseinate having a low solubility in water.
CONSTITUTION: This composition for a liquid food and drink contains an organic acid salt in an amount of 0.005-0.2 pt.wt. based on 1 pt.wt. calcium caseinate.
