Abstract:
PROBLEM TO BE SOLVED: To provide a doughnut mix suitable for making a doughnut, a method of making a doughnut using the same, and a frozen doughnut, the doughnut maintaining an edible state without getting too hard even after it is frozen, being capable of providing an enjoyable crunchy texture even when it is eaten in its frozen state, and being capable of providing an enjoyable texture having excellent melt in mouth even when it is eaten at temperature of food which is the same level as room temperature.SOLUTION: A doughnut mix of the present invention is a doughnut mix suitable for making a frozen doughnut capable of being edible in its frozen state, the doughnut mix comprising 25 to 70 mass% of one or more first ingredients selected from a group consisting of sugar, sugar alcohol, dextrin, and soluble starch, and 0.1 to 10 mass% of one or more second ingredients selected from a group consisting of non-wheat derived protein material, thickener, and dietary fiber. It is preferable that the first ingredients comprise at least one of monosaccharide and disaccharide. It is preferable that the second ingredients comprise at least one of soy flour and egg white powder.SELECTED DRAWING: None
