Abstract:
PROBLEM TO BE SOLVED: To provide a dough which gives flavor and texture like a cookie after baking, and realizes a bulge like a dome and the strength of an inner layer.SOLUTION: When manufacturing a dough for a pot pie, an excess amount of water is added, and sugar and an amount of egg yolk are adjusted to 10-25 wt%, 1.5-10 wt% respectively using a paste pie-manufacturing method, thereby providing the dough for a pot pie giving flavor and texture like a cookie and capable of baking into a dome shape like a pot pie. Furthermore, powder and solid fat are mixed until the longest diameter of the solid fat becomes 1-3 cm, the dough is mixed after the egg yolk and water is added until the dough is put together, and thereafter is rolled and folded to form layers.
