Abstract:

PURPOSE: The lines which have been cut out of a dough sheet are alternately sent to the right or left side and they are fed on the major belt conveyor in a specific way to give a dough sheet piled by in a knit pattern, thus giving a good-quality pie pastry.

CONSTITUTION: A dough sheet 1 is sent between cutting rolls 2, 3 and the lines 4, 5 are alternately separated in the right and left directions, as these lines stick to the grooves of the rollers 2, 3 and peeled off with scrapers 17, 18, then put on belt conveyors 6, 7 which are moving in opposite directions to each other. These separated lines are turned with bars 8, 9 and put on the conveyors 10, 11 then allowed to fall on the major conveyor 12, as they are swung with a U-shaped swingers 13, 14 at the right angle to the conveyor belt 12. The speed of the conveyor 12 and the swing speeds of the two swingers 13, 14 are appropriately adjusted so that lines 5 are beautifully turned at an angle in two layers without gaps, then the other lines 4 is piled up on the folded line 5 to give the objective dough of 4 layers of a knit pattern.
