Abstract:
PURPOSE: To provide a delicious doughnut, which is well dissolved in the mouth, reduces the absorption of fat and maintains dampish conditions, formed by containing Tofu (soybean curd) in dough. CONSTITUTION: This doughnut is formed by preferably containing 5-50wt.% of Tofu in 100% of powdery raw materials in the dough. In this case, it is preferable that the content of soybean protein in the dough is 0.14 to 2.5wt.% and a soybean protein coagulant is contained.
