PURPOSE: To provide a dried fish and animal meat product which can quickly be reconstituted with hot water to give meat having excellent appearance and palatability and provide a process for the preparation of the meat product.

CONSTITUTION: The dried fish and animal meat product contains a heat coagulating β-1,3-glucan, a sugar and a processed starch. The process for the preparation of the meat product is also provided. The dried meat product can quickly be reconstituted with hot water to give a meat composition having excellent appearance and palatability, and, also, has excellent preservability and is usable for instant food, etc.
