A drier which has a heater 20 and a heat transfer passage which has a first passage 12 for supplying matter containing moisture with heat and a second passage 14 being opposed to that first passage 12 and having a condensing face where steam evaporated from the matter containing moisture congeals and letting a heat conductive medium pass, and a drying method are provided. The heater 30 further heats that heat transfer medium being heated by the latent heat released by the water congealed at the condensing face, and the heated heat transfer fluid is led in that first passage 12.
