Abstract:
PROBLEM TO BE SOLVED: To provide a dry composition of various shapes having a heat resistance to melting and resilience (water absorption swelling) even in simmering, and a food product containing the same.SOLUTION: A dry composition contains agar and an alginate in a weight ratio of 1:1-1:20. The alginate contains a bivalent cation of 0.04-0.30 mole and a monovalent cation of 0.10-0.70 mole based on a monomer unit of the alginate, wherein the mole ratio of the bivalent cation and the monovalent cation is 1.0:0.35-1.0:8.70. The dry composition absorbs water and swells in distilled water of 20°C and distilled water of 90°C to become a gel having a weight of 15-100 times the weight of the dry composition in both cases.
