To provide a drying apparatus capable of preferably drying a highly wet organic waste such as a bean curd refuse without oxidation.

In a first step dryer 11, the highly wet organic waste thrown into the dryer is primarily dried in the high humidity and low oxygen atmosphere by hot air generated at a hot air generating oven 12. The primarily dried waste is sent to a second step dryer 21. The exhaust heat from the first step dryer 11 is recovered by a heat exchanger 28 and an outside air heated by the recovered heat is supplied to the second step dryer 21. Therefore, the drying in the second dryer 21 is conducted at the low humidity atmosphere. These, fats and oils contained in the waste are dried with good quality and without oxidation. Also, the heat efficiency is improved by recovering heat.
