The drying device 1 has the drying hopper 10 which stores the powder and granular material from a transporting source 9 supplied from an upper side and which discharges the powder and granular material dried by a supplied heated gas to a supplying destination 2 from a lower side, and a drying performance controlling means 31 that updates a storage amount to a lower level and carries out drying processing of the powder and granular material when it is determined that drying capabilities Y1, Y2, and Y3 which are set in advance based on types of the powder and granular material and storage amounts B, C, and D of the powder and granular material in the drying hopper are more excessive than a procesing capability X and can be lowered to a predetermined reference.
