PURPOSE: Easily soluble powder cream slightly causing oil drop flotation, comprising granules wherein single particles containing a specific glucide component are aggregated.
CONSTITUTION: In easily soluble powder granules consisting of aggregated single particles, a glucide component consists of ≤97wt% lactose and ≥3wt% hydrolyzate of lactose. Addition of the hydrolyzate of lactose to lactose eliminates formation of oil drop flotation on the surface when the easily soluble powder cream is added to coffee or tea. The easily soluble powder cream is obtained by adding lactose and the hydrolyzate of lactose to cream, homogenizing the prepared mixture by a conventional procedure, sterilizing it, drying it to give dried powder, adding a small amount of water to the dried powder, granulating the blend.
