Abstract:
To provide edible filamentous fungal biomat compounds as the single protein source and/or protein component in food products, and production methods of the compounds that require low energy, consume few natural resources, and reduce the cost.SOLUTION: The invention provides a formulation of edible filamentous fungi comprising edible filamentous fungal particles, where the edible filamentous fungal particles comprise unbroken filamentous fungal filaments, broken filamentous fungal filaments, or combinations thereof, where the edible fungal particles are isolated from edible filamentous fungus biomats. Also provided is a method of producing the formulation of edible filamentous fungi. Further provided is a one-time use or repeated use self-contained biofilm-biomat reactor comprising: a container with at least one compartment; and feedstock, a fungal inoculum, a gas-permeable membrane, and optionally a liquid nutrient medium, which are placed within the compartment.SELECTED DRAWING: None
