Abstract:

To provide a novel edible fat system based on dehydrated fat that can cause fresh and foaming sensation in the food, when it is used in food products.

The objective edible fat system based on dehydrated fat comprises 0-2 wt.% of water, 0-15 wt.% of natural flavors and 25-60 wt.% of fat phase, 0.5-35 wt.% of a structurized particular substance system having an weight average particle sizes of 25-500 microns wherein the system includes one or more kinds of active sub-particles with particle sizes of 2-275 microns in the matrix substance at a weight ratio of 99/1-1/99, preferably 80/20-20/80, most preferably 60/40-40/60 and the rest part of the other components selected from flavors, carbohydrates and fillers.
