PURPOSE: To provide an edible oil and fat containing a polyvalent unsaturated fatty acid and saturated fatty acid in a fatty acid residue at a specific ratio, having respective specific iodine value and melting point, effective for suppressing the generation of back odor, having improved oxidation stability without deteriorating the physiological function and useful for food, etc.
CONSTITUTION: This edible oil and fat contains 5-30wt.% of polyvalent unsaturated fatty acids having a carbon number of e.g. 16-22 (containing ≥3 unsaturated bonds, e.g. linolenic acid or arachidonic acid) and 50-80wt.% of saturated fatty acids having a carbon number of e.g. 16-22 (having no unsaturated bond, e.g. palmitic acid) and has an iodine value of ≥35 and a melting point of ≥35°C. Preferably, the triglyceride composition of the oil-and fat is composed of ≤30wt.% of 3-saturated triglycerides, ≥55wt.% of 2-saturated-1-unsaturated triglycerides, ≤14wt.% of 1-saturated-2-unsaturated triglycerides and ≤1wt.% of 3-unsaturated triglycerides and ≥20wt.% of the unsaturated fatty acid of the 2-saturated-1-unsaturated and 1-saturated-2-unsaturated triglyceride is polyvalent unsaturated fatty acid.
