Abstract:

PURPOSE: To obtain the subject fat or oil markedly improved in oxidation stability and the tendency to emit a reversed odor without detriment to its high physiological function.
CONSTITUTION: This fat or oil is the one having a melting point of 30-60°C and obtained by effecting the random transesterification between 1-50 pts.wt. fat or oil having at least 10% tri- or poly-enoic acid residues (e.g. fish oil) and 99-50 pts.wt. fat or oil having below 10% trior poly-enoic acid residues and at least 20% saturated fatty acid residues (e.g. palm oil).
