Abstract:

PURPOSE: To obtain an edible vinegar having characteristics of improving hyperlipemia by subjecting saccharides containing a branched oligosaccharide to the alcoholic and acetic acid fermentations.

CONSTITUTION: This edible vinegar is obtained by subjecting saccharides containing a branched oligosaccharide such as isomaltose, panose or isomaltotriose to the alcoholic and the acetic acid fermentations. Thereby, an acid taste possessed by acetic acid is moderated and the saccharide ingredient of the resultant edible vinegar contains a high-purity isomaltooligosaccharide at a high concentration.
