Abstract:
To replicate the color of a natural egg in an egg-like food, using plant-based materials.SOLUTION: A method for producing an egg-like food includes at least a mixing step. In the mixing step, at least a processed product of a carotenoid-containing plant and edible fat and oil are mixed together to yield a liquid mixture. Preferably, in the mixing step, a processed product of cereal should be further mixed. Also preferably, the production method further includes a homogenization step.
