Abstract:
PURPOSE: To perform a short time of heating at high temperatures without deteriorating the quality of a material by passing liquid food through continuous courses, and simultaneously passing currents between adjacent electrode surfaces inside the courses. CONSTITUTION: Fluid food is preheated by passing it through a heat exchanger and is poured into an electric heating cell. This fluid material diverges around the diffuser 104 of an upstream electrode main body 98 and flows into an electrode main body through a port 106. The fluid material flows into a first transfer course 72, passes through a conical transfer course 78, and flows into a center electrode main body 110. When flowing in an electrode heating unit the material makes temporary contact with the upstream electrode main body 98 and the center electrode main body 110 and with first and second electrode surfaces 100, 112. Currents are passed through the two electrode surfaces 110, 112, thereby heating the material. The material is further heated by third and fourth electrode surfaces 1 14, 120. All kinds of heating are performed on the material within a conduit 84.
