Abstract:
PROBLEM TO BE SOLVED: To provide an emulsified food excellent in long-term emulsion stability, having good flavor, and also desirable, in particular, as a packaged emulsified drink.
SOLUTION: This emulsified food comprises an emulsified product composed of (A) oil and fat containing ≥50 wt.% of diglyceride, and (B) an emulsifier, wherein the weight ratio (A) to (B) is 25/1-5/1, and the average particle diameter of oil spot is 0.07-0.2 μm, and at least ≥0.1 wt.% of oil and fat (A) is contained.
