Abstract:

PURPOSE: To obtain an emulsified oil and fat composition for cake having high emulsion stability, requiring no skillful technique for adding oil and fat in preparing a cake dough and suitable for easily producing cake having voluminous feeling and light eat feeling.

CONSTITUTION: In this emulsified oil and fat composition for cake, 10-90wt.% oil and fat based on the total composition is emulsified and dispersed in water. This composition contains 0.01-5wt.% fatty acid polyglyceride and 1.5-4.5wt.% processed starch and is capable of keeping fluidity at 5°C.
