PURPOSE: To obtain the subject food having excellent taste and flavor and low calorific value by dispersing and emulsifying an edible oil and fat in an aqueous phase containing dissolved water-soluble polymeric substance and adding a polyvalent metal salt to the emulsion, thereby coating the surface of the oil droplet of the oil and fat with a coating film of the polymeric substance and the metal salt.
CONSTITUTION: An edible oil and fat such as soybean oil, palm oil, whale oil, butter and sardine oil is dispersed and emulsified in an aqueous phase containing dissolved water-soluble polymeric substance (preferably xanthan gum, etc.) and an aqueous solution of a polyvalent metal salt (preferably calcium salt, etc.) is added to the emulsion to obtain the objective food. The amounts of the oil, the polymeric substance and the metal salt are preferably 70wt.%, 0.01-2wt.% and 0.1-1wt.% based on the total food and the ratio of oil : metal salt is (1,000-20):1 and that of the polymeric substance : metal salt is 10:1 to 1:10.
