Abstract:
PURPOSE: The titled composition that is obtained by melt-mixing a hydrophilic sucrose fatty acid ester and a lipophilic emulsifier, thus showing high emulsion stability despite low lipid.
CONSTITUTION: The objective composition is prepared by melt-mixing 9W1pts.wt. of hydrophilic sucrose fatty acid ester and 1W9pts.wt. of lipophilic emulsifier such as sorbitan oleate at 100W170°C. The resultant composition contains 8W50wt% of hardened vegetable or animal oil, 1W8wt% of protein such as casein, about 8wt% of carbohydrate such as corn syrup, about 1wt% of an emulsifier and, when needed, phosphate ash, flavors, pigments, stabilizers and so on.
