To obtain an emulsifier having good emulsifying action to oil-in-water and water-in-oil concoctions by transesterifying an alkoxylated sorbitol with a fatty acid methyl ester or a fatty acid triglyceride or by alkoxylating the transesterified product of the sorbitol with the fatty acid methyl ester.
A mixture of closed chain sorbitol mono- and diesters or the like containing a small amount of a cyclic sorbitol ester fraction can effectively reduce the surface tensions of both polar and nonpolar liquids and has low sensitivity to electrolytes and acids. In consideration of the above, the objective emulsifier is obtained by transesterifying an alkoxylated sorbitol with a fatty acid methyl ester or a fatty acid triglyceride or alkoxylating a reaction product produced by transesterification with a fatty acid methyl ester. The fatty acid contained in the fatty acid methyl ester and in the fatty acid triglyceride preferably contains 8-22 carbon atoms.
