Abstract:

PURPOSE: To obtain an emulsifying agent capable of maintaining a shape before freezing, providing whip topping without causing change of overrun and hardness even by freezing and thawing, having excellent artificial flower formation and shape retention free from water separation, not damaging qualities.

CONSTITUTION: This emulsifying agent composition for whip topping is the emulsifying agent composition which comprises a sucrose fatty acid ester, a sorbitan fatty acid ester and a glycerol fatty acid ester and has 4-8 HLB value and 3-12 iodine value.
