Abstract:

To provide an emulsifying force measuring container and an emulsifying force measuring method, using the container capable of measuring quickly and simply the emulsifying force of emulsifiers, proteins, starches, polysaccharides or the like.

In this emulsifying force measuring container, which is a measuring container, wherein an approximately spherical emulsifying part and a graduated cylindrical measuring part are integrated together, the emulsifying force is measured, by shaking and emulsifying an oil phase and a water phase filled in the container. This emulsifying force measuring method has characteristics, wherein the emulsifying force measuring container is used, and the oil phase and the water phase are filled in the container. and shaken and emulsified, in a state with the container being reversed, and then the container is replaced quickly to the former state, and a separated water-phase quantity is measured from the graduation attached to the cylindrical measuring part.
