To provide an enzymatic production method for a brain-function-improving peptide.
The method for producing a brain-function-improving peptide includes: hydrolysing milk casein by an enzymatic catalyst including a protease to produce a hydrolysate including (i) a peptide including a specific amino acid sequence or a peptide including an amino acid sequence including deletion, substitution or addition of one or two amino acid residues in this amino acid sequence; (ii) a peptide including another specific amino acid sequence or a peptide including an amino acid sequence including deletion, substitution or addition of one or two amino acid residues in this amino acid sequence set; or (iii) a mixture of the peptides of (i) and (ii). The generation yield of each of the peptides is at least 2% or the total generation yield of the mixture is at least 10%. A food product, drink, or medicinal composition including the hydrolysate is also provided.
