Abstract:

PROBLEM TO BE SOLVED: To obtain the subject compound high in solubility to water, and useful for preventing canned mandarin oranges from getting cloudy and natural coloring matter from discoloration, by making α-L-rhamnosidase act on a solution containing α-glucosylhesperidin and hesperidin.
SOLUTION: This enzyme-treated hesperidin high in solubility to water, not getting cloudy even after preserved for a long period and useful for preventing canned mandarin oranges from getting cloudy and natural coloring matter from discoloration is obtained by making an α-L-rhamnosidase activity- bearing exogenous enzyme (e.g. hesperidinase) on a solution containing α- glucosylhesperidin of formula I and hesperidin of formula II to convert the hesperidin to β-monoglucosylhesperetin. This enzyme-treated hesperidin contains the α-glucosylhesperidin, ≤0.1 pts.wt. of the hesperidin per pts.wt. of the α- glucosylhesperidin and 0.1-0.5 pts.wt. of the β-monoglucosylhesperetin per pts.wt. of the α-glucosylhesperidin.
