Abstract:
The disclosed yeast has a high salt tolerance, and further high ethanol productivity, heat resistance, ethanol resistance, and coagulation sedimentation. Concretely, the yeast (a) can grow in a YPD medium having 2.0M KCl, (b) produces 7-10%(v/v) ethanol at a medium temperature of 40C having as a raw material a blackstrap molasses dilution solution with sugar content 15%(w/w) and ash content 5-6%(w/w), and (c) is capable of coagulation sedimentation within one minute of stopping the stirring after 12 hours of stirring culture with a YPD medium containing 5% glucose at 35C.
