The evaporator 1 includes a plurality of heat transfer tubes 2, an upper tube plate 3 in which the heat transfer tubes 2 are supported at intervals from each other, and a first dispersing plate 5 provided at the upper part of the upper tube plate 3. A plurality of liquid permeation holes 51 allowing the raw material liquid to pass are formed in a position that overlaps the region in which the heat transfer tubes 2 of the upper tube plate 3 are not provided in the first dispersing plate 5 viewed from the extending direction of the heat transfer tubes 2. A plurality of ventilation holes 52 allowing gas to pass are formed in a position that overlaps the heat transfer tubes 2. The heat transfer tubes 2 have a protrusion 2a protruding from the upper surface of the upper tube plate 3.
