Abstract:

PROBLEM TO BE SOLVED: To provide a method for expressing antifreeze marine fish peptides in a food grade organism and a method for applying the same to foods.
SOLUTION: A polypeptide or a protein having an amino acid sequence substantially corresponding to III type AFP (antifreeze protein) HPLC-12 is used as a product additive for improving products, e.g., by preventing or suppressing recrystallization of ice of a frozen product, e.g., to modify a cryohydrate-growing process to minimize latent freezing damages, especially to modify dimension and shape characteristics of ice in regrowing of the ice. Specific antifreeze activity higher than that obtained in the same quantity of Winter Flounder AFP and an application to AFP to especially obtain antifreeze activity in a conventional method are included.
