PURPOSE: To produce an extract seasoning having high quality at a low cost by imparting a natural extract with fragrance components of smoke in a well balanced state.
CONSTITUTION: A natural extract of 1.000kg is placed in a closed container and heated at 50-80°C to increase the fluidity. Smoke is generated from a smoke generator by using 120-250kg of smoking material such as smoke wood and the smoke is introduced into the heated extract. The efficiency of the contact and absorption of the smoke components with and by the extract is enhanced by applying vacuum suction. By this process, various kinds of extracts such as bonito extract, beef extract, shiitake mushroom (lentinus edodes) extract, yeast extract and protein hydrolysate are each imparted with smoke components in a well balanced state in terms of fragrance and genuine high-quality extracts are obtained.
