Abstract:
PROBLEM TO BE SOLVED: To provide an extraction method of a soup suitably for making use of flavor or taste of a raw type acid liquid seasoning and a liquid seasoning using the soup.SOLUTION: There are provided an extraction method of a soup, where en extraction solvent during soup extraction contains soy sauce and millet vinegar and the following formulae are satisfied, where Y is acetic acid concentration (W/V%) and Y is nitrogen concentration (W/V%) in the extraction solvent, and the soup extracted by the extraction method. There is also provided a raw type acid liquid seasoning by blending the soup. 1.8X≤Y≤14X, Y≥-5X+7, 0.4≤X≤1.4, 1.9≤Y≤5.5.SELECTED DRAWING: Figure 1
