Abstract:
PURPOSE: To provide the subject noodles enabling their heating and cooking time to be shortened, excellent in palate feeling, useful for spaghetti, etc., so designed that grooves of a specified depth are provided along noodle ribbons and the area associated with the groove portions accounts for a specified proportion of the imaginary cross-sectional area of the noodle ribbons.
CONSTITUTION: The objective noodles having the following characteristics: (1) grooves are provided along noodle ribbons and the depth of each groove is one-third to two-third of the thickness of each noodle ribbon; and (2) the area associated with the groove accounts for 2-25% of the imaginary cross-sectional area of the noodle ribbon.
