Abstract:
To provide an oil and fat composition for liquid coffee whitener capable of manufacturing a liquid coffee whitener excellent in oxidation stability and emulsion stability, by reducing trans aliphatic acid and saturated aliphatic acid at same time.SOLUTION: There is provided an oil and fat composition for liquid coffee whitener containing 100 pts.mass of a raw material oil and fat and 0.05 to 0.5 pts.mass of lecithin, in which constituent aliphatic acid of the oil and fat composition is 70 to 83 mass% of oleic acid, 14 mass% or less of linoleic acid, 0.8 mass% or less of α-linoleic acid, and 1 mass% or less of trans aliphatic acid.SELECTED DRAWING: None
