Abstract:
PROBLEM TO BE SOLVED: To provide a fat composition capable of providing a dough having no exudation of oil and fat even when stored at cold dark place (15 to 25°C) for long time, good in dispersibility into a confectionery bread dough, and excellent in workability during milling with less stickiness.SOLUTION: The fat composition contains: fat that includes SSU type triglyceride in which saturated aliphatic acid S binds at 1 and 2-position and unsaturated aliphatic acid U binds at 3-position, SUS type triglyceride in which saturated aliphatic acid S binds at 1 and 3-position and unsaturated aliphatic acid binds at 2-position, and SSS type triglyceride in which saturated aliphatic acid S binds at all 1, 2, and 3-position, the total content of the SSU type triglyceride, SUS type triglyceride, and SSS type triglyceride being 15 to 55 mass%; glycerol mono aliphatic acid ester; glycerin organic acid aliphatic acid ester; and thickening polysaccharide.
