Abstract:
PURPOSE: To obtain a fat contg. specified amts. of cis, trans and unsatd. acids and fit for confectionery such as a biscuit by selectively hydrogenating palm kernel oil. CONSTITUTION: Palm kernel oil is hydrogenated with a selective catalyst such as sulfur treated nickel carried on a diatomaceous earth carrier to obtain the objective fat contg. >=25% unsatd. fatty acid, >=50% trans acid equivalent to the cis acid content and 60-90% unsatd. fatty acid of unhardened laurin fat.
